It's World Health Day so take a look at this delicious and healthy recipe from Dale Pinnock

Today is World Health Day and the focus of this year’s campaign is depression, with the aim being that more people with this debilitating illness seek, and get, help.

Although he makes no claim that adopting a healthier diet will cure you of your depression and anxiety, Dale Pinnock, aka The Medicinal Chef, thinks that making changes to the way we eat can have a positive impact on our mental and emotional well being.

So in honour of World Health Day here’s a recipe from his book Anxiety and Depression: Eat your way to better health.

 

Satay prawns and greens Trust me, this dish has such an addictive quality… you’ll be doing back flips that it is actually good for you, too! We used intact prawns for the photo, but buy those without heads or shells, if you prefer.

Serves 1

Ingredients

1 large red onion, halved then sliced

2 garlic cloves, finely chopped

1 red chilli, finely chopped

1 tbsp olive oil

sea salt

2 handfuls of greens (I prefer spring greens or similar), shredded

80g cooked king prawns, deveined if necessary

1 heaped tbsp peanut butter

1 tsp honey

3 tsp soy sauce

½ tsp Chinese

5-spice powder

Method 

Sauté the onion, garlic and chilli in the oil with a good pinch of sea salt, until the onion softens. Add the greens and continue to stir-fry until they turn a brighter green and begin to soften. Add the prawns, peanut butter, honey, soy sauce and 5-spice and mix well before serving.
